1/2 cup softened butter

1 cup mashed bananas
1/2 cup buttermilk
6 ounces mini chocolate chips (optional)
1/2 cup chopped pecans or other nuts (optional)
Preheat oven to 350 degrees F.
Mix flour baking soda, and salt together in a medium bowl.
In another bowl, cream softened butter with sugar. Add eggs and blend. Add buttermilk and mashed bananas and blend until combined.
Pour flour mixture into wet mixture and mix just until combined.

Stir in the mini chocolate chips and nuts. Do not overmix.
Spray muffin pan with non-stick cooking spray or use paper liners. Fill each cup 2/3 full with batter. Bake at 350 degrees for about 25-30 minutes or until toothpick inserted in the center of a muffin comes out clean.
