Classic Banana Bread


Banana bread.  What can be better?  It's always cozy and a delight any time of day--breakfast, snacks, afternoon tea, dessert.  It is also a wonderful gift for family and friends.  This is a basic recipe but add whatever you'd like--chocolate chips, nuts!  I added 1 cup of semi-sweet chocolate chips.


4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups brown sugar
4 eggs, beaten
4 cups mashed overripe bananas (very darkly spotted)
1 cup semi-sweet chocolate chips (optional)

Preheat oven to 350 degrees.  Lightly grease two 9x5-inch loaf pans.

In a large bowl, combine flour, baking soda, and salt. 

In a separate mixing bowl with an electric mixer, cream together butter and brown sugar.  Stir in the eggs and mashed bananas until well blended.  On the mixer's lowest setting, stir banana mixture into flour mixture; stir just until moistened.  Pour the batter evenly into the two prepared loaf pans.

Bake for 50-60 minutes, until a toothpick inserted into the center of the loaves come out clean.  Let the bread cool in the pans for 10 minutes, then turn them out onto a wire rack to finish cooling.
